So, I’ve been under the weather for a week or so. Relapsed yesterday, and so I’m back to water, bread rolls, and a little chicken broth. Really nutritious, right? So I fixed that.
Quick Homemade Chicken Soup
- 3 boneless skinless chicken thighs
- 32oz reduced sodium chicken broth
- 4 cups water (more if you want)
- 1 tsp celery salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- handful of random pasta
Toss everything but the pasta all in a pot over high heat, cover, and come back in 45 minutes. Reduce to a simmer, throwing in the pasta. Re-cover, and in another 10 minutes, homemade chicken soup any cranky stomach can handle.
PS – You really should add any salt at the end. You’ll be able to adjust it to how much you can take. I didn’t put any vegetables in, since I know my stomach can’t do it just yet, but feel free to add carrots, parsnips, or potatoes to increase the nutrition content.
ALSO! I used frozen solid thighs, and just let the broth help defrost and soak in the love over 2 hours. Low heat, if you’re going to do that.
